Celebrate Plant-Based Eating and Biodynamic Wines

Taking up residence in Hackney, East London until this November, Squeg & Bonez is the all-new, must-visit vegan pop-up and specialty coffee brew bar from Liverpool-born school friends Alice Harry and Holly O’Leary. With the vegan landscape in London reaching fever pitch, Squeg & Bonez is the duo’s first solo venture together, and boasts a hotbed of plant-powered sharing plates alongside an extensive range of natural wines and a specialty coffee brew bar.

Not limited to just those looking for a meat-free meal, the menu demonstrates how vegan food can be eclectic, flavoursome and ambitious – even to the most dedicated of carnivores. Think fantastic food, all expertly executed by Chef Holly, who cut her teeth overseeing Tom Brown’s Cornerstone.

Coupled with her time working for Gordon Ramsay’s team, Holly has been able to create an accessible and forward-thinking menu appeals to all.

Open on weekends and in the evenings, the menu has been designed to be shared, with convivial- style dining. With a plethora of plates heavily influenced by Asian flavours, the dishes showcase the diverse nature of vegan eating. Vegetables undoubtedly take center stage, and Holly works closely with suppliers to create an ever-evolving menu of dishes inspired by what is available that week. The hero dish, hot and cold noodles, is joined by a number different dishes guaranteed to delight, including pickled mushroom dumplings, sweet potato wanton with cherry miso, red wine braised tofu with pickled aubergine, and roasted tender stem with kaffir lime broth.

Sharing bites include the summer crispy coconut kale, beetroot cured tofu and sesame toast with plum sauce. Guests can satiate their sweet cravings with two dessert options: gooseberry and cinnamon Eton mess, and sticky miso toffee pudding.

Squeg & Bonez vegan pop-up: The Wine

The wine list at Squeg & Bonez is the result of two years of working hand-in-hand with specially- selected suppliers, including Natural Born Wines, Dynamic Vines and Wines Under the Bonnet. This has resulted in a modest but unique selection, featuring delicious, creative and organic wines tapping into the demand for biodynamic, natural and organic wines. Each producer featured on the menu has been chosen because of their special story– curating the menu is this way has been a focal point for the duo. Each story is re-told to diners in an approachable way – with a focus on the flavor and wine rather than jargon-heavy language to help every individual discover a new wine they can be passionate about. The wines are also available to purchase to take away.

The star of the show is Rosato, Cantina Furlani 2018 (from Natural Born Wines) – a sparking pinot noir with a vibrant and eye-catching magenta pink colour, and distinctive frothy top. With no added sugar – unlike many sparkling wines - it has a clean flavor akin to freshly picked blackberries.

Other wines on the menu include two from Josemyer Vineyard (from Dynamic Vines), a female-run, family-owned vineyard which was founded in 1854; Fleur de Lotus and Mise du Printemps both have a delicate, tropical sweetness that pairs exceptionally with the food at Squeg & Bonez.

It’s not all about the food and wine at Squeg & Bonez – during the day and into the evening, the pop-up is a specialist coffee brew bar. Alice, inspired by her time with the likes of Monmouth Coffee Company and Allpress Espresso, as well by travelling extensively around Central America: Costa Rica, Panama, Nicaragua and El Salvador, and meeting producers, has created a unique brew bar is stocked with single origin brews and cold tea infusions.

Guests can try the Squeg & Bonez specials like the cold brew latte, and cold brew tonic, as well as the house-made earl grey with blood orange.

Named after its founders, Alice being Squeg, and Holly, Bonez, Squeg & Bonez is a laid-back space redefining and revolutionising plant-based dining in the capital, and where interesting small plates, coffee and organic wines are the order of the day.
